Lime Icebox Cake (Vegan)

This lime icebox cake delivers on every front—refreshing, sweet, tangy, and remarkably easy to prepare. It combines lightly sweetened digestive cookies with layers of smooth, creamy cream cheese filling infused with bright, zesty lime flavor. Served chilled, this delightful dessert is an ideal make-ahead option, making it perfect for summer gatherings or family get-togethers.
What you will need:
This is a wonderfully simple dessert that needs just a few ingredients and a bit of your time. Fresh limes and cookies or graham crackers are essential, along with heavy cream and cream cheese. I chose digestive cookies for a less sweet option, and they worked perfectly. I used Philadelphia Original Plant Based Cream Cheese, though any plant-based version will do. Three medium limes provided the perfect amount of juice and zest for the recipe. Everything you need can be easily found at your local grocery store.
Ingredients:
- 3 medium limes
- plant based heavy cream -I used Country Crock Dairy Free Heavy Whipping Cream
- plant based cream cheese – I used Philadelphia Original Plant Based Cream Cheese
- digestive cookies – I used McVitie’s Digestive Cookies
- powdered sugar

How to:
Prep Work:
I used a 9x9x2 square container for this recipe, but an 8×8 will work too—you’ll just have some extra ingredients left over.
Start by zesting and juicing the limes. You will need 1.5 tablespoons of lime zest plus extra if you would like to decorate the top of the dessert, and 10 tablespoons of lime juice. Set the juice and zest aside for later.
To Prepare the Filling:
To the bowl of a stand mixer add the cream cheese. Using a balloon whisk attachment, whip the cream cheese at high speed for 3 minutes. If you don’t have a stand mixer, a handheld mixer can also be used.
Once the cream cheese is whipped, add the heavy cream, lime juice and lime zest to the bowl and continue whipping at high speed for another 5 minutes.
Lastly, add the powdered sugar to the bowl and blend at medium speed for 1 to 2 minutes or until the powdered sugar is well incorporated.

To Assemble:
Line the bottom of the pan with cookies; 9 cookies fit perfectly across the bottom of my pan. Cover the cookie layer with one third of the prepared filling, making sure it is spread out evenly over the cookie layer. Place another layer of cookies (I used 9 cookies) over the top of the filling. Cover the cookie layer with one third of the filling. Repeat with one more layer of cookies and then top them with one more layer of filling. Smooth out the top of the dessert and sprinkle it with some crushed cookie pieces and lime zest.



Set, Serve, Storage:
Cover and place the dessert in the refrigerator for 6 to 8 hours to set. I left mine in the refrigerator overnight. When you are ready to serve the dessert, remove it from the refrigerator, slice it into servings and enjoy. Store the icebox cake in the refrigerator for up to 3 days.

Ingredients
- 27 whole digestive cookies (you can also use cookie of your choice or graham crackers)
- 1½ cups plant based heavy cream – cold
- 12 oz plant based cream cheese – room temperature
- 1 cup powdered sugar
- 1½ tbsp lime zest
- 10 tbsp lime juice
Instructions
- Zest and juice the limes.
- To the bowl of a stand mixer, add the cream cheese. With a balloon whisk attachment, whip the cream cheese for 3 minutes at high speed.***You can also do this with a handheld mixer.
- Add the heavy cream, lime juice and lime zest to the whipped cream cheese. continue whipping at high speed for 5 minutes.
- Add the powdered sugar to the mixture and blend at medium speed for 1 to 2 minutes or until the sugar is well incorporated.
- Place a layer of cookies across the bottom of the 9x9x2 square pan. (I used 9 cookies.)
- Add one third of the filling to the top of the cookie layer, making sure to spread it out evenly.
- Add another layer of cookies to the top of the filling layer and add another one third of the filling to the top of the cookie layer, making sure to spread it out evenly.
- Repeat one more layer of cookies and one more layer of filling.
- Smooth out the top of the dessert, sprinkle some crushed cookie pieces and a little lime zest over the top of the dessert for decoration.
- Cover the dessert and place it in the refrigerator for 6 to 8 hours or overnight.
- Remove the dessert from the refrigerator and slice and serve.
- The dessert will remain fresh in the refrigerator for up to 3 days.
