This blondie recipe brings together the delightful flavors of maple, butter, and pecans. I used maple syrup, raw pecans, and butter extract. While butter extract isn’t dairy-free, I found a great alternative—OliveNation Vegan Butter Flavor Extract, which I ordered from Amazon. The rest of the ingredients are simple pantry staples you can easily find at your local grocery store.

How to:

The first step is to measure out the pecans and roughly chop them. Make sure to chop up a few extra pecans if you plan to sprinkle some over the top of the blondies before baking. Preheat the oven to 350 degrees and prepare an 8×8 square pan by lining it with parchment paper.

Now that the prep work is done, it’s time to begin. In a small bowl, combine the all-purpose flour and baking powder. Whisk them together and set aside. In a medium bowl, mix the melted butter, cane sugar, and maple syrup, whisking until well blended—about 30 seconds to a minute. Add the vanilla extract, butter extract, and room-temperature yogurt to the wet mixture, and whisk again until smooth, for another 30 seconds to a minute. Gradually add the dry ingredients to the wet ingredients, whisking until no traces of flour remain. Finally, fold in the roughly chopped pecans until evenly distributed in the blondie batter.

Pour the blondie batter into the prepared pan, spreading it out evenly. Sprinkle the reserved pecan pieces over the top. Bake the blondies for 25 to 30 minutes, until they are lightly browned and a toothpick inserted comes out clean.

While the blondies cool, you can prepare the glaze. In a small bowl, mix together the powdered sugar, milk, vanilla extract, and maple syrup until smooth and fully combined. Once the blondies have cooled to room temperature, drizzle the glaze over them. They’re now ready to be cut and served. Store any leftovers in an airtight container at room temperature.

  • 2 cups / 240 grams all-purpose flour
  • ¼ tsp baking powder
  • 1 cup / 200 grams cane sugar
  • 2 tbsp maple syrup
  • 2 sticks / 226 grams plant based butter with salt – melted
  • ½ cup / 120 grams plant based yogurt – room temperature
  • ½ tbsp vanilla extract
  • ½ tsp butter extract – OliveNation Vegan Butter Flavor Extract
  • ½ cup pecans – roughly chopped + extra for the top of the blondies

Maple Glaze

  • cup / 38 grams powdered sugar
  • 1 tsp plant based milk
  • 1 tsp maple syrup
  • 1 tsp vanilla extract

Instructions

  • Measure out the ½ cup of pecans and roughly chop them. Set them aside for later.
    Preheat the oven to 350F and prepare an 8×8 square pan by lining it with parchment paper.
  • To a small bowl, add the flour and baking powder, whisk to combine and set aside for later
  • To a medium bowl, add the melted butter, sugar and maple syrup. Whisk for 30 seconds to a minute to fully incorporate.
  • Add the butter extract, vanilla extract and yogurt to the butter mixture. Whisk until well combined – 30 seconds to 1 minute.
  • Add the dry ingredients to the wet ingredients. Whisk just until no more flour can be seen. Add the pecans and fold them in until well incorporated.
  • Pour the batter into the prepared pan. Make sure it is spread out evenly. Sprinkle some roughly chopped pecans over the top of the batter.
  • Bake the blondies for 25 to 30 minutes or until lightly browned and a toothpick inserted comes out clean.
  • Once out of the oven, place the pan on a cooling rack and let the blondies cool completely in the pan.

Maple Glaze

  • Add the powdered sugar, vanilla extract, milk, and maple syrup to a small container. Stir until fully combined and smooth. Drizzle the glaze over the cooled blondies. The blondies are now ready to be cut and served.
    Store the blondies in an airtight container at room temperature.
