Maple Butter Pecan Blondies
- 2 cups / 240 grams all-purpose flour
- ¼ tsp baking powder
- 1 cup / 200 grams cane sugar
- 2 tbsp maple syrup
- 2 sticks / 226 grams plant based butter with salt - melted
- ½ cup / 120 grams plant based yogurt - room temperature
- ½ tbsp vanilla extract
- ½ tsp butter extract - OliveNation Vegan Butter Flavor Extract
- ½ cup pecans - roughly chopped + extra for the top of the blondies
Maple Glaze
- ⅓ cup / 38 grams powdered sugar
- 1 tsp plant based milk
- 1 tsp maple syrup
- 1 tsp vanilla extract
Maple Butter Pecan Blondies
Measure out the ½ cup of pecans and roughly chop them. Set them aside for later.Preheat the oven to 350F and prepare an 8x8 square pan by lining it with parchment paper. To a small bowl, add the flour and baking powder, whisk to combine and set aside for later
To a medium bowl, add the melted butter, sugar and maple syrup. Whisk for 30 seconds to a minute to fully incorporate.
Add the butter extract, vanilla extract and yogurt to the butter mixture. Whisk until well combined - 30 seconds to 1 minute.
Add the dry ingredients to the wet ingredients. Whisk just until no more flour can be seen. Add the pecans and fold them in until well incorporated.
Pour the batter into the prepared pan. Make sure it is spread out evenly. Sprinkle some roughly chopped pecans over the top of the batter.
Bake the blondies for 25 to 30 minutes or until lightly browned and a toothpick inserted comes out clean.
Once out of the oven, place the pan on a cooling rack and let the blondies cool completely in the pan.
Maple Glaze
Add the powdered sugar, vanilla extract, milk, and maple syrup to a small container. Stir until fully combined and smooth. Drizzle the glaze over the cooled blondies. The blondies are now ready to be cut and served.Store the blondies in an airtight container at room temperature.
