  • cane sugar
  • brown sugar or coconut sugar
  • vanilla extract
  • Biscoff cookies
  • white chocolate chips (dairy-free) – I use Enjoy Life mini white chocolate baking chips

How to:

Let’s get started on this super easy bake. Start by preheating the oven to 350°F and lining an 8×8 square baking pan with parchment paper. Grab the Biscoff cookies and roughly chop them up. Set them aside for later. Melt the two sticks of butter and set it aside for a minute or two.

In a small bowl, add the flour, baking powder, and cinnamon. Whisk the ingredients to fully combine and set the bowl aside for later. In a medium bowl, add the melted butter and both sugars. Whisk the butter and sugar together for 1 minute. To the sugar mixture, add the yogurt and vanilla extract. Continue whisking for another 30 seconds to a minute to make sure all ingredients are fully combined. To the bowl of wet ingredients, add the dry ingredients; whisk just until no more flour is seen. Add the roughly chopped cookies and white chips and fold them in until fully incorporated.

Pour the batter into the prepared pan, making sure to spread it out evenly. Sprinkle some reserved cookie pieces and white chocolate chips across the top before baking for 35 minutes. The edges should be pulling away from the pan and slightly browned, and a toothpick inserted should come out clean. Allow the blondies to cool in the pan for 20 to 30 minutes before transferring them to a cooling rack.

Store the blondies in an airtight container at room temperature.

  • 2 cups / 240 grams all purpose flour
  • cups / 250 grams cane sugar
  • ¼ cups / 48 grams brown sugar or coconut sugar
  • 2 sticks / 226 grams plant based butter with salt
  • ¼ tsp baking powder
  • 1 tbsp vanilla extract
  • ½ cups / 120 grams plant based yogurt
  • ¼ tsp cinnamon
  • ¾ cup roughly crushed Biscoff cookies (about 5 cookies) + extra for the top
  • ½ cup white chocolate chips + extra for the top ( I used Enjoy Life mini white baking chips)

Instructions
 

  • Preheat the oven to 350F and prepare an 8×8 square pan by lining it with parchment paper.

  • Add the dry ingredients to the wet ingredients and whisk just until combined and no more flour can be seen. Add the roughly chopped Biscoff cookies and white chocolate chips and fold them in just until incorporated.
  • Add the batter to the prepared pan, spread it out evenly, and sprinkle the extra Biscoff cookie pieces and white chocolate chips over the top. Bake for 35 minutes or until a toothpick inserted comes out clean.
    Allow the blondies to cool in the pan for 20 to 30 minutes before transferring them to a cooling rack.
    Store the blondies in an airtight container at room temperature.
