Fudgsicles (Vegan)

What’s not to love about a homemade fudgsicle? It’s a wonderfully creamy, chocolatey, sweet delight, perfect for cooling off on a hot day or indulging a late-night chocolate craving. This incredibly easy treat is ideal for customization—switch up the milk, swap the sweetener, try a different cocoa powder, or add a splash of extract. These fudgsicles require only 5 ingredients, whip up in 15 minutes (not including freezer time) and are completely dairy free.
What you will need:
These fudgsicles are a quick and easy treat made with just five pantry-friendly ingredients. Cocoa powder is my go-to for this recipe, but cacao powder works great too. I used oat milk, though any plant-based milk of your choice will do.
Ingredients:

- plant based milk
- cane sugar
- cornstarch
- vanilla extract

How to:
Mold:
Have your favorite popsicle mold ready and waiting. This recipe makes 6 regular size popsicles. The recipe can easily be doubled or tripled for more popsicles. How to make:
To a medium pot, add the cane sugar, cocoa powder and cornstarch. Whisk the dry ingredients together, making sure there are no lumps of cocoa or cornstarch. Add the milk to the pot and stir until all of the ingredients are well blended. Place the pot over medium heat and bring the mixture to a simmer. Stir the mixture until the sugar is dissolved and then stir regularly as the mixture heats up. Once the mixture reaches a simmer, allow it to maintain the simmer for 1 minute. Remove the pot from the heat, add the vanilla extract and stir well.
Let the pudding like mixture cool for 10 minutes. The mixture will continue to thicken as it cools, so be careful how cool you allow it to get before you pour it into the molds. Pour the mixture into a large measuring cup with a pouring spout, this makes filling the molds easier. Pour the mixture into your molds. You should have enough for 6 popsicles. Insert the sticks that came with the mold and place the popsicles in the freezer until they are completely frozen. If using wooden popsicle sticks like I did, place the popsicles in the freezer and let the mixture firm up enough to support the wooden popsicle stick – this took about 45 minutes. Place a wooden stick in each popsicle and return the popsicles back to the freezer until they are frozen solid. This should take another 6 to 8 hours. I left mine in the freezer overnight.

Serving and Storage:
Once the popsicles are completely frozen, they’re ready to enjoy. Run the mold under warm water to easily release them. Keep the popsicles in the freezer for up to two weeks, and if you store them in an airtight container or wrap them individually, they’ll stay fresh even longer.

- Add the milk to the pot, whisk until all ingredients are well combined.
- Place the pot over medium heat, stirring until the sugar dissolves.
- Bring the mixture to a simmer, stirring regularly. Once a simmer is reached, maintain the simmer for 1 minute.
- Remove the pot from the heat, add the vanilla, stir well.
- Allow the mixture to cool for 10 minutes.
- Pour the mixture into a large measuring cup with a pouring spout. Pour the mixture into the popsicle molds – you should have enough for 6 popsicles.
- Place the mold in the freezer for 6 to 8 hours (I left mine overnight) or until the popsicles have frozen solid. They are ready to serve.***If using wooden sticks, you will need to wait until the popsicles have firmed up enough to support them before inserting them.
