Fudgsicles (Vegan)
These fudgsicles are and easy, dairy-free, creamy, chocolatey delight. Perfect for cooling off on a hot day or satisfying a late-night chocolate craving.

- 2 cups plant based milk
- 5 tbsp cocoa powder or cacao powder
- ⅔ cup cane sugar
- 1 tbsp cornstarch
- 1 tbsp vanilla
Add the sugar, cocoa and cornstarch to a medium pot, whisk until well combined and no lumps.
Add the milk to the pot, whisk until all ingredients are well combined.
Place the pot over medium heat, stirring until the sugar dissolves.
Bring the mixture to a simmer, stirring regularly. Once a simmer is reached, maintain the simmer for 1 minute.
Remove the pot from the heat, add the vanilla, stir well.
Allow the mixture to cool for 10 minutes.
Pour the mixture into a large measuring cup with a pouring spout. Pour the mixture into the popsicle molds - you should have enough for 6 popsicles.
Place the mold in the freezer for 6 to 8 hours (I left mine overnight) or until the popsicles have frozen solid. They are ready to serve.***If using wooden sticks, you will need to wait until the popsicles have firmed up enough to support them before inserting them.
