Fudgsicles (Vegan)

These fudgsicles are and easy, dairy-free, creamy, chocolatey delight. Perfect for cooling off on a hot day or satisfying a late-night chocolate craving.

Ingredients
  

  • 2 cups plant based milk
  • 5 tbsp cocoa powder or cacao powder
  • cup cane sugar
  • 1 tbsp cornstarch
  • 1 tbsp vanilla

Instructions
 

  • Add the sugar, cocoa and cornstarch to a medium pot, whisk until well combined and no lumps.
  • Add the milk to the pot, whisk until all ingredients are well combined.
  • Place the pot over medium heat, stirring until the sugar dissolves.
  • Bring the mixture to a simmer, stirring regularly. Once a simmer is reached, maintain the simmer for 1 minute.
  • Remove the pot from the heat, add the vanilla, stir well.
  • Allow the mixture to cool for 10 minutes.
  • Pour the mixture into a large measuring cup with a pouring spout. Pour the mixture into the popsicle molds - you should have enough for 6 popsicles.
  • Place the mold in the freezer for 6 to 8 hours (I left mine overnight) or until the popsicles have frozen solid. They are ready to serve.
    ***If using wooden sticks, you will need to wait until the popsicles have firmed up enough to support them before inserting them.
