These classic brownies are a wonderful combination of fudgy and cakey, with a lovely chocolate flavor that isn’t overbearing. They are dairy- and egg-free and just take a few minutes to prepare.

This is a simple, easy, no-frills brownie that takes you back to your childhood. They are a little cakey, a little fudgy, and just chocolatey enough. Sometimes we need to forgo all those fancy flavors and get back to basics. These brownies whip up in a matter of minutes and bake to perfection in 30 minutes. Just think, you could be enjoying a warm, chocolatey brownie in less than an hour. Give these yummy bites of nostalgia a try; you won’t regret it.

What you will need:

Dark chocolate in bar form, not chips, is a must for this recipe. I played around with egg replacements for this recipe. After some trial and error, I came up with a nice combination of ground flax seed, plant based yogurt and water. All of the ingredients for this recipe can easily be found at your local grocery store.

How to:

These brownies are as delicious as they are easy. They come together in 10 to 15 minutes and bake up in 30 minutes. You could be enjoying a warm, chocolatey brownie in less than an hour. First things first, prepare an 8×8 square pan by lining it with parchment paper. Don’t preheat the oven yet; we will be doing that later.

The egg substitute needs time to thicken a little, so let’s prepare that first. To a small bowl or measuring cup, add the ground flax seed, yogurt, and water. Mix the ingredients together until well combined and set it aside to thicken for 5 to 10 minutes. While waiting on the flaxseed mixture to thicken, the butter and chocolate can be melted. To a small pot, add the chocolate and butter. Place the pot over medium heat. Once melted, remove the chocolate/butter mixture from the heat and set it aside for later.

To a medium bowl, add the sugar and the flax seed mixture. With a hand-held mixer, blend the ingredients together on medium speed for 2 minutes. To the sugar mixture, add the chocolate/butter mixture along with the vanilla extract. Continue blending on medium speed for another 2 minutes. Add the flour and baking soda to the brownie batter, folding until just combined. Lastly, add the walnuts and chocolate chips, folding until well combined.

Pour the brownie batter into the prepared pan, set it aside, and preheat the oven to 350°F. Once the oven reaches temperature, bake the brownies for 30 minutes. Allow the brownies to cool completely before removing them from the pan. Store the brownies in an airtight container at room temperature.

Ingredients
  

  • 60 grams dark chocolate – I used Lindt Excellence 70%
  • 1 stick / 113 grams plant based butter with salt
  • ¾ cup + 2 tbsp / 105 grams all purpose flour
  • tsp baking soda
  • 1 cup / 200 grams cane sugar
  • 1 tsp vanilla extract
  • 2 tbsp ground flax seed
  • 2 tbsp plant based yogurt
  • 4 tbsp water
  • ¼ cup roughly chopped walnuts
  • ¼ cup chocolate chips

Instructions
 

  • Prepare an 8×8 pan by lining it with parchment paper. We are going to preheat the oven later.
  • In a small bowl or measuring cup, add the ground flax seed, yogurt and water. Stir to fully combine and set aside to thicken – 5 to 10 minutes.
  • To a small pot, add the chocolate and butter; melt over medium heat and set aside.
  • To a medium bowl, add the sugar and ground flax seed mixture. With a hand mixer on medium speed, blend for 2 minutes. Add the melted chocolate/butter mixture and the vanilla extract, blend on medium speed for another 2 minutes. Add the flour and baking soda and fold them in just until no more flour can be seen. Add the walnuts and chocolate chips, fold them in just until combined.
  • Pour the batter into the prepared pan and set aside. Preheat the oven to 350F.
    Once the oven is ready, bake the brownies for 30 minutes. Allow the brownies to completely cool in the pan.
    Store the brownies in an airtight container at room temperature.
