Classic Brownies (Vegan)

These classic brownies are a wonderful combination of fudgy and cakey, with a lovely chocolate flavor that isn't overbearing. They are dairy- and egg-free and just take a few minutes to prepare.

Ingredients
  

  • 60 grams dark chocolate - I used Lindt Excellence 70%
  • 1 stick / 113 grams plant based butter with salt
  • ¾ cup + 2 tbsp / 105 grams all purpose flour
  • tsp baking soda
  • 1 cup / 200 grams cane sugar
  • 1 tsp vanilla extract
  • 2 tbsp ground flax seed
  • 2 tbsp plant based yogurt
  • 4 tbsp water
  • ¼ cup roughly chopped walnuts
  • ¼ cup chocolate chips

Instructions
 

  • Prepare an 8x8 pan by lining it with parchment paper. We are going to preheat the oven later.
  • In a small bowl or measuring cup, add the ground flax seed, yogurt and water. Stir to fully combine and set aside to thicken - 5 to 10 minutes.
  • To a small pot, add the chocolate and butter; melt over medium heat and set aside.
  • To a medium bowl, add the sugar and ground flax seed mixture. With a hand mixer on medium speed, blend for 2 minutes. Add the melted chocolate/butter mixture and the vanilla extract, blend on medium speed for another 2 minutes. Add the flour and baking soda and fold them in just until no more flour can be seen. Add the walnuts and chocolate chips, fold them in just until combined.
  • Pour the batter into the prepared pan and set aside. Preheat the oven to 350F.
    Once the oven is ready, bake the brownies for 30 minutes. Allow the brownies to completely cool in the pan.
    Store the brownies in an airtight container at room temperature.
