Cardamom Coffee Cookies (Vegan)

A soft, flavorful cookie full of cardamom and coffee. A tasty, egg-free, dairy-free treat with a little caffeine kick.

These cookies are incredibly soft and flavorful. This recipe is on repeat in my house right now, and for good reason. They are super easy and super tasty; a batch can be whipped up in half an hour. You can’t beat that. Add the little caffeine kick of the espresso powder and these guys are irresistible. If you haven’t tried cardamom in your baking yet, this is your chance to start. Give these cookies a try, you will not be sorry.

What you will need:

This recipe requires espresso powder and cardamom. All other ingredients are basic pantry items. Espresso can be found at your local grocery store. I have had trouble finding cardamom at times, but it can always be found at Amazon.

How to:

These cookies are so easy, you could have a batch in 30 minutes. Start by melting the butter and setting it aside. In a small bowl, add the flour, baking powder, baking soda, espresso powder, and cardamom. Whisk the dry ingredients together until they are fully combined.

In a medium bowl, add the melted butter, sugar, vanilla extract, and yogurt. Whisk the wet ingredients together until they are well combined, about a minute. Add the dry ingredients to the wet ingredients, mixing until just combined and no more flour can be seen.

Place the cookie batter in the refrigerator, preheat the oven to 350F, and prepare two cookie sheets. Once the oven reaches temperature, remove the batter from the refrigerator and begin scooping the dough balls with a 3-tablespoon scoop. Roll each dough ball between your palms to smooth them out then place them on the prepared pans. Bake the cookies for 12 minutes. Once out of the oven let the cookies rest on the pan for 5 to 10 minutes before transferring to a cooling rack.

These cookies will stay fresh for up to 7 days if kept in an airtight container.

Ingredients
  

  • 4 tbsp / 60 grams plant based yogurt (room temperature)
  • 1 stick / 113 grams plant based butter with salt – melted
  • 1½ cups +2 tbsp / 195 grams all purpose flour
  • 1 cup / 200 grams coconut sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 2 tsp vanilla extract
  • 2 tsp espresso powder
  • 1 tsp cardamom

Instructions
 

  • Melt the butter and set aside.
  • To a small bowl add the flour, baking soda, baking powder, espresso powder and cardamom; whisk to fully incorporate and set aside.
  • To a medium bowl add the melted butter, sugar, vanilla extract and yogurt. Whisk the ingredients together to fully incorporate – about a minute. Add the dry ingredients to the wet ingredients. Whisk together until all ingredients are well combined.
  • Place the cookie batter in the refrigerator, preheat the oven to 350F and prepare two cookie sheets.
