Salted Caramel Ice Cream (Vegan)

What you will need:
Three ingredients and fifteen minutes or so are all you’ll need for this recipe. If you want to make your own sweetened condensed milk and salted caramel, it will take more time, but you can prepare them ahead of time.
- planted based heavy cream
- plant based sweetened condensed milk – homemade or store bought will work (please see my recipe for sweetened condensed milk with oat milk on the website)
- salted caramel – store bought or homemade will work (please see my recipe for salted caramel on the website)
How to:
This recipe is super simple. If you choose to make homemade sweetened condensed milk and/or salted caramel, go ahead and make those the day before so they have time to cool down before making the ice cream. Get two medium-sized bowls ready. In one bowl, add the plant-based heavy cream, and in the other bowl, add the plant-based sweetened condensed milk and the salted caramel. First, whip the heavy cream until soft peaks are reached then whip the condensed milk and caramel together for about one minute. Add the caramel mixture to the whipped cream and fold them together until fully combined. Pour the ice cream into a freezer-safe container (I used a 6x6x2 glass container with a lid). Place the ice cream in the freezer for at least 6 hours or until set; I usually leave it in over night. The ice cream stays fresh in the freezer for up to 2 weeks.

Salted Caramel Ice Cream (Vegan)
Ingredients
- 1¼ cup plant based heavy cream
- ½ cup sweetened condensed milk – store bought or homemade ( see recipe on the website if interested)
- ½ cup salted caramel – store bought or homemade ( see recipe on the website if interested) (room temperature)
Instructions
- In a medium bowl add the heavy cream and whip on high with a hand mixer until soft peaks are reached.
- In a medium bowl add the salted caramel and sweetened condensed milk and whip with a hand mixer on high for 1 minute.
- Add the caramel mixture to the whipped cream and fold them together until they are fully combined. Pour the ice cream into a freezer container ( I used a glass 6x6x2 container with a lid). Place the ice cream in the freezer. Takes at least 6 hours to set; I usually leave it in the freezer overnight. The ice cream is good in the freezer for up to 2 weeks.
