Muddy Buddy Ice Cream (Vegan)
This muddy buddy ice cream is a delightful combination of creamy vanilla ice cream and sweet and crunchy muddy buddies. An easy, delicious, and dairy-free treat.
What happens when you bring vanilla ice cream and homemade muddy buddies together? You get this oh so creamy, fun, and delicious ice cream. The base is a simple combination of plant-based heavy cream and homemade sweetened condensed milk. The muddy buddies are a quick and easy 4-ingredient combination. If you are a fan of muddy buddies, this is a fun way to enjoy their sweet, chocolatey, crunchy goodness.
What you will need:
You will need muddy buddies for this recipe, homemade or store bought will work. All other ingredients can easily be found at your local grocery store.
- Life Original Multi Grain Cereal
- Chocolate – I used Lindt Excellence 70%
- Biscoff Cookie butter
- powdered sugar
- Plant Based Heavy Cream
- Plant Based Sweetened Condensed Milk – homemade or store bought will work
How to:
Let’s make the muddy buddies first. Pour the cereal into a medium bowl and set it aside. In a small pot, add the chocolate and Biscoff Cookie Butter and place the pot over medium heat. Remove the pot from the heat once the chocolate and Biscoff have melted. Whisk to fully combine the chocolate and Biscoff then set it aside to cool slightly. After cooling for a couple of minutes, pour the chocolate mixture over the cereal and stir until all of the cereal is coated. Add the powdered sugar to the bowl and toss the cereal until all of the pieces are coated in sugar. Spread the muddy buddies out onto a large cookie sheet to completely cool and dry.
To make the chocolate sauce, add the chocolate and Biscoff Cookie Butter to a small pot. Place the pot over medium to medium-low heat and melt the chocolate and biscoff. Once melted, remove the pot from the heat and whisk to combine.
Now to make the ice cream base. In a medium bowl, add the heavy cream and whip on high with a hand mixer until soft peaks are achieved. Pour the sweetened condensed milk into the bowl with the whipped heavy cream and continue whipping on high for another minute. Set aside 1/2 cup of the muddy buddies and add the rest to the ice cream base. Gently fold the muddy buddies into the ice cream just until fully incorporated.
Pour 1/3 of the ice cream into a freezer-safe container—I used a 6x6x2 glass container with a lid. Drizzle 1/3 of the chocolate sauce over the ice cream and swirl it through. Pour the another 1/3 of the ice cream into your container and drizzle 1/3 of the chocolate sauce, making sure to swirl it through. Repeat this process one more time. Sprinkle the 1/2 cup of reserved muddy buddies over the top of the ice cream. Cover the ice cream and place it in the freezer. The ice cream needs 6 to 8 hours to achieve a nice scoop able consistency; I usually leave mine in the freezer overnight.

- 1½ cups Life Original Multi Grain Cereal
- ¼ cup / 60 grams Chocolate – I used Lindt Excellence 70%
- 1½ tbsp Biscoff Cookie Butter
- 6 tbsp / 45 grams Powdered Sugar
Chocolate Drizzle
- 6 tbsp / 90 grams chocolate – I used Lindt Excellence 70%
- 1 heaping tbsp Biscoff Cookie Butter
Ice Cream Base
- 1¼ cup plant based heavy cream (needs to be cold)
- 1 cup plant based sweetened condensed milk (see recipe on the website if interested in making it homemade)
Instructions
Muddy Buddies
- Add the cereal to a medium bowl and set it aside. In a small pot, add the chocolate and Biscoff Cookie Butter. Place the pot over medium heat and melt the chocolate and Biscoff. Add the powdered sugar to the cereal and toss until all of the cereal is coated in sugar. Spread the muddy buddies out onto a large cookie sheet to completely cool and dry.
Chocolate Sauce
- Add the chocolate and Biscoff Cookie Butter to a small pot. Place the pot over medium heat and melt the chocolate and Biscoff. Once melted, whisk to fully combine and set it aside.
Muddy Buddy Ice Cream
- Add the heavy cream to a medium bowl and whip on high with a hand mixer until soft peaks are achieved. Add the sweetened condensed milk to the whipped heavy cream and continue whipping for another minute. Reserve about 1/2 cup of the muddy buddies and pour the rest into the ice cream base. Gently fold the muddy buddies in until just incorporated.Pour 1/3 of the ice cream into a freezer safe container – I used a 6x6x2 glass container with a lid. Drizzle 1/3 of the chocolate sauce over the ice cream and swirl it through. Repeat this 2 more times with the ice cream and chocolate sauce. Sprinkle the reserved muddy buddies over the top of the ice cream.Cover the ice cream and place it in the freezer. It will take 6 to 8 hours for the ice cream to reach a nice scoop able consistency, I usually leave mine in the freezer over night.
