Blackberry Coulis and Lime Curd Parfait (Vegan)

A slightly sweet, slightly tart, cool summer treat filled with the flavors of blackberries and limes. It’s egg-free, dairy-free, easy to prepare, and fun to eat.

I love the combined flavors of blackberries and limes, and I love the look of layered desserts. This parfait brings these two loves together. A beautiful, slightly sweet blackberry coulis, sweet whipped cream, and a lovely, tart lime curd.

What you will need:

This is one of the easiest desserts you will ever bring together. The blackberry coulis comes together with three ingredients in less than 5 minutes. The lime curd takes 10 minutes of your time with a mere six ingredients. Lastly, you can have lovely, sweet whipped cream with only 4 ingredients and 10 minutes.

  • extra zest for decoration

Whipped Cream

  • plant based heavy cream
  • vanilla extract
  • powdered sugar
  • cream of tartar

How To:

First things first, prepare the blackberry coulis and lime curd. Both of these recipes are on the website. Both of these recipes can be prepared ahead of time. Preparing them ahead of time can make assembly day easier.

To prepare the whipped cream, add the heavy cream and cream of tartar to the bowl of a stand mixer. Whip on high with a balloon whisk attachment for 3 to 5 minutes. Once soft peaks are achieved, add the vanilla extract and powdered sugar and continue whipping on high for another 3 to 5 minutes.

To bring these cute little desserts together, we simply layer our 3 ingredients. To the bottoms of each dessert container add 3 tablespoons of the blackberry coulis. Then add a layer of whipped cream to each container. Fill a piping bag ( fitted with the tip of your choice) with 2/3 of the whipped cream. Pipe equal amounts of the whipped cream into each dish and spread it out evenly. Now place 3 tablespoons of lime curd to the top of the whipped cream layer, spreading it out evenly. Pipe a little of the reserved whipped cream over the tops of each dessert. A blackberry and a sprinkle of lime zest added to the top of each dessert is a nice final look.

Ingredients
  

  • 3/4 cup blackberry coulis – see recipe on the website
  • 3/4 cup lime curd – see recipe on the website
  • 3/4 cup plant based heavy cream (needs to be cold)
  • ¼ + ⅛ tsp cream of tartar
  • 3/4 tsp vanilla extract
  • 6 tbsp powdered sugar

Instructions
 

  • Prepare the blackberry coulis and the lime curd. They can both be made ahead of time ( recipe for both of these are on the website). Make sure the lime curd is room temperature before assembling the dessert.
  • To prepare the whipped cream, add the heavy cream and cream of tartar to the bowl of a stand mixer. Whip on high with a balloon whisk attachment for 3 to 5 minutes. Once soft peaks are achieved, add the vanilla extract and powdered sugar and continue whipping on high for another 3 to 5 minutes.
  • To assemble the desserts, you will add 3 tablespoons of blackberry coulis to each dessert container. Make sure it is evenly covering the bottom. To a piping bag (fitted with the tip of your choice) add 2/3 of the whipped cream . Pipe equal amounts of the whipped cream into each container, covering the blackberry coulis layer. Now add 3 tablespoons of lime curd to each container making sure it is evenly spread out over the whipped cream layer. The last of the whipped cream can either be dolloped onto the tops of each dessert or added to the piping bag and piped over the top of each dessert.
    For a final look, a blackberry can be placed on top of each dessert and a little lime zest sprinkled over the top of each dessert.
    I suggest serving the desserts same day but they will be fine in the refrigerator for a day or two.
