Peach Sorbet

A bright, refreshing frozen dessert bursting with fresh peach flavor. It is easy to make, naturally dairy-free and the perfect summer treat.

This peach sorbet is the ultimate summer dessert. It’s light, cool, refreshing, and easy to make. Made from a simple blend of fresh peach purée, simple syrup, and a touch of maple syrup, it boasts a smooth, slightly creamy texture. This peach sorbet is the perfect-frozen treat for those hot summer days.

What you will need:

Take advantage of peach season and make this sorbet with fresh, ripe peaches. The recipe is incredibly simple, requiring minimal ingredients, but you will need an ice cream maker. I find churning the sorbet gives a smoother consistency than simply freezing it.

How to:

The sorbet is churned in an ice cream maker to achieve the smooth, slightly creamy consistency that we want. Ensure the bowl of the ice cream maker is thoroughly frozen before you begin making the puree. Place it in the freezer 12 to 24 hours before you plan to make the sorbet.

The sorbet is sweetened with a simple syrup, so let’s prepare it. To a small pot, add the water and sugar. Place the pot over medium-low heat, leaving it there until the sugar dissolves. Occasionally stir the mixture while the sugar is dissolving. Once the sugar has dissolved, remove the pot from the heat, pour the syrup into a heat-safe container and let it cool to room temperature.

I used 8 medium ripe peaches for this sorbet. Peel and slice the peaches before pureeing them.

Place all the peach slices in a blender. Blend the peaches on high for one minute to create the puree. You want 3 1/2 cups of puree. To the puree, add the maple syrup, lemon juice and 1/2 cup plus 2 tablespoons of the simple syrup. Blend the ingredients together on high for 30 seconds. Pour the sorbet into a freezer-safe container, cover the container and place it in the freezer for 1 hour.

Place the chilled sorbet into the bowl of your ice cream maker. Begin churning it, making sure to follow the instructions for your specific ice cream maker. I churned my sorbet for 25 minutes. I ended up with a smooth and slightly creamy peach sorbet.

Pour the sorbet into a freezer-safe container with a lid and freeze it for about 4 hours. It should be soft, scoop-able and ready to serve. Longer freezing times make the sorbet firmer. A firmer sorbet will require a little time to soften before serving. Store the sorbet in the freezer.

Ingredients
  

  • 8 medium peaches – each peach should be peeled and cut into 8 slices. ( you should end up with 3½ cups of puree)
  • 2 tbsp pure maple syrup
  • 2 tsp lemon juice
  • ½ cup + 2 tbsp water
  • ½ cup + 2 tbsp cane sugar

Instructions
 

  • This recipe requires an ice cream maker, so make sure the ice cream bowl has been placed in the freezer 12 to 24 hours before preparing the sorbet.
  • To make the simple syrup – add the water and cane sugar to a small pot. Place the pot over medium-low heat and stir occasionally until the sugar has dissolved. Remove the pot from the heat and let the syrup cool to room temperature.
  • Peel and slice each peach into 8 slices. Add the peach slices to a blender and puree them by blending on high speed for 1 minute. Add the lemon juice, maple syrup and 10 tablespoons (½ cup plus 2 tablespoons) of the simple syrup to the blender and blend on high speed for another 30 seconds.
  • Pour the sorbet into a freezer safe container, cover the container and place it in the freezer for 1 hour.
  • Pour the chilled sorbet into the bowl of the ice cream maker and churn the sorbet per your ice cream maker's instructions. I churned mine for 25 minutes. It had a smooth, slightly creamy consistency. Scoop the sorbet from the ice cream bowl and place it into a freezer safe container with a lid. Place the sorbet in the freezer for about 4 hours.
    After 4 hours, the sorbet will have a soft, scoop able consistency and is ready to serve. The longer the sorbet spends in the freezer, the firmer it will become and will require time to soften before serving.
    Store the sorbet in the freezer.
