Lemon Lime Sugar Cookie Bars (Vegan)
A delightful summertime treat, these sugar cookie bars are soft and zesty, bursting with lemon-lime flavor. A simple yet highly addictive, dairy-free, egg-free bar that comes together quickly.
These bars are ideal if you are unable to decide between lime and lemon. The perfect combination of lemon and lime in a gorgeously soft sugar cookie bar. Both the cookie and glaze contain juice and zest, which combine to provide a delightful citrus flavor.
What you will need:
Basic pantry ingredients are all that is required for this recipe, along with lemons and limes. I found that 1 medium lemon and 2 limes were enough to produce all the juice and zest I needed for this recipe.

How to:
Let’s start by zesting and juicing the lemon and limes and setting the juice and zest aside. Melt the butter and add the lemon zest and lime zest to it; set it aside to cool. In a small bowl, add the flour, baking soda, and cream of tartar; whisk to fully combine.
In a medium bowl, add the sugar and butter mixture; whisk for a minute to fully combine. To this mixture, add the yogurt, lemon juice, and lime juice. Mix for another 30 seconds to fully combine. Add the dry ingredients to the wet ingredients and mix until fully combined.
Add the cookie dough to a prepared 8×8 square pan. Spread it out evenly in the pan and bake at 350F for 20 minutes. The cookie bars should be golden brown along the edges and pull away from the pan. Let the bars cool in the pan for 10 to 20 minutes before transferring them to a cooling rack.
While the bars are cooling, the lemon glaze and the lime glaze can be prepared. In a small bowl, add all of the lemon glaze ingredients. Mix the ingredients together until they are fully combined and smooth. Repeat this for the lime glaze.
Once the sugar cookie bars are completely cool, they can be glazed. Drizzle the first glaze across the bars from one corner, moving diagonally to the opposite corner. With the second glaze, criss-cross over the first glaze. If you have some lemon and lime zest left over, it can be sprinkled over the glaze for a final look.
These bars will stay fresh for 3 to 5 days in an airtight container on the counter. They will stay fresh a little longer if kept in the refrigerator.

- 1¾ cup / 210 grams all purpose flour
- ½ tsp cream of tartar
- ¼ tsp baking soda
- 2 tsp lemon juice
- 2 tsp lime juice
- 1 tbsp lemon zest
- 1 tbsp lime zest
- 1 stick / 113 grams plant based butter with salt
- 4 tbsp / 60 grams plant based yogurt
- 1 cup / 200 grams cane sugar
Lime Glaze
- 5 tbsp powdered sugar
- 2 tsp lime juice
- ½ tsp lime zest + extra to sprinkle over the top of the bars
Lemon Glaze
- 5 tbsp powdered sugar
- 2 tsp lemon juice
- ½ tsp lemon zest + extra to sprinkle over the top of the bars
Instructions
- Pre heat the oven to 350F and prepare an 8×8 square pan. Zest and juice the lemon and limes and set the juice and zest aside.
- Melt the butter and add the lemon zest and lime zest to it. Stir to combine and set aside.
- To a small bowl add the flour, baking soda and cream of tartar; whisk to combine and set aside.
- To a medium bowl add the sugar and butter mixture and whisk to combine – about a minute. To the sugar mixture add the yogurt, lemon juice and lime juice; whisk to combine – 30 seconds to a minute. Add the dry ingredients to the wet ingredients and mix until fully combined.
- Add the cookie dough to the prepared pan, making sure sure to spread it out evenly, and bake for 20 minutes or until the edges are golden brown and coming away from the pan. Let the bars cool in the pan for 10 to 20 minutes before transferring to a cooling rack.
- While the cookie bars are cooling, the two glazes can be prepared. In one small bowl add all the ingredients for the lemon glaze; stir until fully combined and smooth. In another small bowl add all the ingredients for the lime glaze; stir until fully combined and smooth.
- Once the sugar cookie bars are completely cool, they can be glazed. Drizzle one of the glazes across the bars from one corner diagonally to the other. Take the second glaze and criss cross it over the first glaze. Sprinkle some of the reserved lemon and lime zest over the top of the glaze for a final look.Keep the bars in an airtight container. They stay fresh on the counter for 3 to 5 days. Will stay fresh longer if kept in the refrigerator.
