Cinnamon Orange Blondies (Vegan)

Cinnamon and orange are beautifully fused in these sweet and slightly fudgy cinnamon and orange blondies. An easy and delicious dairy-free treat that is hard to resist.
These blondies combine the flavors of cinnamon and orange in a deliciously rich treat. They are moist, tender, and packed with a bright citrus flavor complemented by warm cinnamon undertones. They are easy to prepare and dairy-free, making them an irresistibly sweet indulgence.
What you will need:
Orange juice, orange zest and a little cinnamon are a must for these blondies. One medium orange will do. All of the ingredients needed for this recipe are easily found at your local grocery store.

How to:
These blondies are as delicious as they are easy to make. Let’s get started! First, preheat the oven to 350°F and line an 8×8-inch square pan with parchment paper. In a small bowl, combine the flour, baking powder, and cinnamon. Whisk these dry ingredients together and set the bowl aside. In a medium bowl, add the cane sugar and orange zest. Use your fingers to rub the zest into the sugar until it’s fully blended. Next, add the melted butter to the sugar mixture. Whisk the butter and sugar until well combined, which should take about a minute. Ensure all the butter is incorporated, resulting in a whipped and smooth appearance. Then, add the yogurt and vanilla extract and continue whisking until everything is well combined, about 30 seconds. Finally, whisk the dry ingredients into the wet ingredients until no traces of flour remain.
Pour the blondie batter into the prepared pan, ensuring it is spread out evenly. Bake the blondies for 28 to 32 minutes; mine baked perfectly at 30 minutes. The edges should begin to brown and pull away from the sides of the pan, and a toothpick inserted into the center should come out clean. Allow the blondies to cool completely in the pan.

Once the blondies are completely cool, you can prepare the glaze. To a small bowl, add the powdered sugar, orange juice, and a dash of cinnamon. Stir the ingredients together until smooth and well combined. Drizzle the glaze over the blondies. The blondies are now ready to be cut and served. Another option is to slice the blondies and then drizzle the individual bars. A dash of cinnamon and a sprinkle of orange zest over the top of the blondies is a nice final touch. Store the blondies at room temperature in an airtight container.

- 2 cups / 240 grams all purpose flour
- 1¼ cups / 250 grams cane sugar
- 2 sticks / 226 grams plant based butter with salt – melted
- ¼ tsp baking powder
- ½ tbsp vanilla extract
- ½ cup / 120 grams plant based yogurt – room temperature
- 1½ tbsp orange zest
- ½ tsp cinnamon
Glaze
- ½ cup powdered sugar
- 1½ tbsp orange juice
- dash of cinnamon
- optional – cinnamon and orange zest to decorate the tops of the blondies.
Instructions

- To a small bowl, add the flour, baking powder and cinnamon; whisk to combine and set the bowl aside.
- To a medium bowl, add the sugar and orange zest. Rub the zest into the sugar using your fingers until the zest is incorporated through out the sugar.
- Add the melted butter to the sugar and zest. Whisk until all ingredients are well incorporated and it has a smooth, whipped texture – about a minute.
- Add the yogurt and vanilla extract; whisking until well incorporated- about 30 seconds.
- Add the dry ingredients to the wet ingredients, whisking just until no more flour can be seen.
- Pour the batter into the prepared pan and bake for 28 to 32 minutes. The edges should be starting to brown and pulling away from the pan. A toothpick inserted should come out clean.
- Allow the blondies to cool completely in the pan. Once cooled, the blondies can be glazed and served.
Glaze
- To a small bowl, add the powdered sugar, orange juice and cinnamon; whisk until smooth and well combined.
- Glaze the blondies and serve. A sprinkle of cinnamon and some orange zest added to the top is a nice final touch.Store the blondies in an airtight container at room temperature.
