Chai Blondies (Vegan)

These blondies check all the boxes – they are sweet, moist, full of warm spices and super easy to make. Give these egg free and dairy free sweet treats a try, you won’t be sorry.
This is a super moist, super flavorful blondie overflowing with the flavors of chai, inside and out. If you are as much of a chai lover as I am, you will love these blondies. When I say they are packed with chai spices, I am not kidding around. The blondie and glaze are filled with a combination of ginger, cardamom, cinnamon, cloves, and nutmeg, creating an amazing taste and aroma. Don’t miss out on the lovely flavor and tender texture of these irresistible blondies.
What you will need:
With just a handful of ingredients and a few spices, you can whip these blondies up in no time. The spices are the star of the show in this recipe so let’s make sure we have all of them before we get started. Need one of the spices? They should all be found at your local grocery store. I will be honest, this last year I have had trouble finding cardamom at the store. Don’t distress, it can be found on Amazon.
- all purpose flour
- baking powder
- combination of cane sugar and coconut sugar
- plant based butter with salt
- plant based yogurt
- vanilla extract
- combination of spices – ginger, cardamom, cinnamon, nutmeg and cloves
- glaze – powdered sugar, water and 1 1/4 tsp of above spice mix

How to:
Bringing this recipe together could not be easier. Begin by adding all of the spices to a small bowl and stirring to combine well. This mixture will be used for the blondie and the glaze. In a medium bowl, combine the flour, baking powder, and 1 tablespoon and 1 teaspoon of the spice mixture and whisk to combine. Next, melt the butter and add it to a medium bowl with both sugars; whisk for 1 minute to thoroughly combine. To the wet ingredients, add the yogurt and vanilla and whisk for another minute. Lastly, add the dry ingredients to the wet ingredients and fold until just combined. Pour the batter into a prepared 9×9 pan and bake for 30 – 35 minutes. Once out of the oven, leave the blondies in the pan for 20 to 30 minutes before transferring to a cooling rack. While the blondies are cooling, the glaze can be prepared. In a small bowl, add the powdered sugar, water, and 1 1/4 tsp of the already prepared chai mix and whisk until well combined and smooth. Once the blondies are completely cool, the glaze can be poured over the top and spread out with an off-set spatula or the back of a spoon.
Helpful tools/tips:
You’ll need a 9×9-square pan for this recipe. You can use an 8×8 square pan, but because the batter will be thicker, watch the baking time. They will remain fresh on the countertop for three to five days if stored in an airtight container. If stored in the refrigerator, they will remain fresh for a few extra days.

Ingredients
- 2½ cups/300 grams all purpose flour
- ¼ heaping tsp baking powder
- 1 cup/ 200 grams cane sugar
- ¾ cup/ 150 grams coconut sugar
- 2½ sticks/ 282 grams plant based butter with salt – melted
- 10 tbsp/ 150 grams plant based yogurt (plain or vanilla will work) (room temperature)
- 1 tbsp + 1 tsp vanilla extract
- 1 tbsp + 1 tsp chai spice mix
Chai spice mix
- 1½ tsp ginger
- 1½ tsp cardamom
- ¾ tsp cinnamon
- ¾ tsp nutmeg
- ¼ +⅛ tsp cloves
Glaze
- 6 tbsp powdered sugar
- 1 tbsp water
- 1¼ tsp chai spice mix
Instructions
- Preheat oven to 350℉ and prepare a 9×9 pan by lining it with parchment paper
- In a small bowl combine all the spices in the chai spice mix (see above) and set aside – this will be used for the blondie as well as the glaze.
- In a small bowl combine the flour, baking powder and 1 tablespoon + 1 teaspoon of the chai spice mix, whisk until combined and set aside.
- Melt the butter (this can be done on the stovetop or in the microwave). Add the melted butter to a large bowl with both sugars and whisk them together for 1 minute. Add the room temperature yogurt and vanilla to the butter mixture and whisk for another minute.
- Add the flour mixture to the wet ingredients and fold in until well combined. Pour the batter into the prepared pan and bake for 30 – 35 minutes or until a toothpick comes out clean. Remove from the oven, let cool in the pan for 20 to 30 minutes and transfer to a cooling rack.
- While the blondies are cooling, the glaze can be made. In a small bowl combine the powdered sugar, water and chai spice mix (see above), whisk until combined and smooth. Once the blondies are completely cool, pour the glaze over the top of the blondies and spread with an off set spatula or the back of a spoon.Store them in an air-tight container. They should stay fresh 3 to 5 days.
