Mandarin Curd (Vegan)

Mandarin curd is a tangy, sweet addition to dessert, toast or quick bread. It comes together with only 6 ingredients and 10 minutes. A dairy-free, egg-free, fun and easy treat.

Ingredients
  

  • 6 tbsp / 90 grams plant based milk
  • ¾ cup / 150 grams cane sugar
  • 2 tbsp cornstarch
  • 1 tbsp mandarin zest
  • ½ cup mandarin juice
  • 2 tbsp plant based butter with salt

Instructions
 

  • In a medium pot add the sugar and cornstarch and whisk to fully combine. Add the milk, mandarin zest, and mandarin juice and whisk to combine.
  • Place the pot over medium heat and bring the mixture to a simmer; stirring regularly as it heats up. The mixture will begin to thicken and become more orange in color; you want the consistency to be thick yet pourable. Keep in mind it will thicken as it cools.
  • Once the desired thickness is reached (takes about 10 minutes), remove the pot from the heat and add the butter. Stir the curd until the butter is melted and fully incorporated. Pour the curd into a heat safe container and allow to cool to room temperature.
    Store the curd in the refrigerator until you are ready to use it. Will stay fresh in the refrigerator for up to 2 weeks.
